‘Louchebem’ is a slang word dating from the time when Les Halles was the ‘belly’ of Paris, which referred to ‘the butcher’. Today, the Louchebem remains faithful to its reputation of being the oldest grill-room in the capital. It serves purely meat, but high-quality meat chosen with care and always cooked to perfection.
