The burger is back on the menu, gourmet style, for the pleasure of foodies

Burgers definitely top the list when it comes to street food favourites. It’s easy to see why burgers are more popular than ever. They’ve strayed into gourmet terrain, using super-fresh ingredients, artisan bread and high-quality meat. These days, restaurants entirely dedicated to this US speciality are flourishing all over Paris. Check out our selection of great restaurants!

The unmissable

One of Paris’s not-to-miss burger purveyors is Big Fernand, with no fewer than seven restaurants in the French capital (Saint-Honoré, Montorgeuil, Poissonnière ...). The concept is a hamburger ‘à la française’ with ingredients from France: fresh bakery bread, French meat (freshly cut), homemade sauces and unpasteurized cheeses such as Tomme de Savoie, Raclette and Fourme d’Ambert.

The very trendy Paris New York (PNY for short) offers gastronomic burgers made with quality ingredients: the beef, matured for several weeks, comes from David Akpamagbo’s farm Le Ponclet in Brittany (which also supplies Michelin-starred restaurants such as Lasserre, Michel Rostang and Yannick Alléno), the brioche bun is handmade. The menu features a dozen different types of burger (including a vegetarian option), notably one called The Return of the Cowboy: beef from Le Ponclet farm, mature cheddar (aged for nine months), streaky bacon confit, onion fritters and BBQ sauce. Melt in the mouth!

Blend also puts the accent on quality ingredients, with beef selected by the star butcher Yves-Marie le Bourdonnec and homemade buns. Seven types of burgers in all, and one seasonal speciality, with a veggie option for each. A bonus is the little touch of originality in the recipes which makes all the difference.

Off the beaten track

For an à la carte burger, head to B&M Burger. You can create your own recipe from a large choice of fresh ingredients: rocket, tomatoes, pickles, mushrooms, chilli, caramelized onions, etc. From the fillings to the sauce and the extras, you can put together a custom designed burger! You can also choose one of the house burgers, like the famous signature B&M burger. A very simple recipe that works terrifically well.

The new trend : the smash burger

What's the difference with the traditional burger? The meat is smashed, cold, on a hot griddle. The new Parisian craze, the smash burger can be enjoyed at La Félicita, Blend, Dumbo or Echo.
