The Chardenoux, first opened in 1908, is one of the last authentic Parisian bistros to have been listed as a historical monument. It was created by the family of the same name from Lozère who bought it at the start of the 20th century during the creation of rue Jules Valles in Paris. Taken over by celebrity chef Cyril Lignac in 2009, it offers superb art deco features: walls decorated with mirrors and a bar of marble marquetry (no less than 14 different types) in inlaid panels. The pewter counter is post-war because the original pewter was requisitioned by the Germans to make weapons. Lignac puts the emphasis on specialities of French cuisine while adding a modern touch. There is one watchword: respect tradition and local products.
